If He is all powerful, and all good, and all knowing, He should be able to forgive all the sins of the world without killing His ONLY begotten Son. So how can this be?

Again, God being the perfect Judge, He can't turn a blind eye to His creation and look the other way. Otherwise that would make Him a corrupt Judge, and hence evil and unjust! But according to the OT, you need unblemished blood sacrifices. And these animal sacrifices were not everlasting- sins needed to be atoned for often. So one perfect/sinless sacrifice is needed to properly and forever atone for our sins.
Jesus being unblemished and perfect, was the perfect sacrifice for the whole world.
So justice is fulfilled and people can now be saved.

If He made everything and could make up all the rules, then He can do this.

Assuming that we could place our sin on an object wouldn't work because an object doesn't have the capacity to sin or act, and therefore it logically couldn't take our sins for us. Further, "the law requires that nearly everything be cleansed with blood, and without the shedding of blood there is no forgiveness" (Heb 9:22). Objects aren't alive- they don't have the capacity to sin nor do they have blood, and therefore they could never take our place and atone for our sins. Jesus could take on our sin because he could be tempted and not sin (which is what he did) and with his bloodshed, he forever atoned for our sins.

If God promised certain things, then He can't take it back that easily, logically. In this case He promised a Messiah who would bear our sins.

Wondering why God didn't come up with another plan to save us from our sins is another way of saying that He doesn't know best. You're implying that some other plan would be better, although this "better" plan would of course just be something that seems right to us. However, God is infinitely wiser than us. His thoughts are not our thoughts, they are higher than ours (Isaiah 55:8) and all His ways are just (Deut 32:4). We can trust that His plan is perfect, just, and overall better than anything we could ever come up with.

< OK Since we cannot fulfill God's law ourselves (because we are sinful), it follows that only God can.
This is simple logic. If we are unable to fulfill the Law, then we will be punished by it. But, since God desires us to be saved, the Law must be satisfied. Since we cannot keep the Law and it must be satisfied, then the only one capable of keeping the Law must keep the Law: God.
Because Jesus is both God in the flesh (John 1:1, Col 2:9), and a man under the law (1 Tim 2:5, Gal 4:4,5), he was able to take our place and become sin for us (2 Cor 5:21, 1 Pt 2:24, Rom 8:3,4). Nothing and no one else could have paid the penalty of our sin for us.
